About this coffee
Sinai takes its name from the mountain where Moses met God — a place you climb toward and come down from changed. This coffee comes from mountain country too: the Besoeki region surrounding Mount Ijen in East Java, known for quality Arabica grown at 1,000–1,800 meters.
This lot is processed by Kevenka, a collaboration between brothers Kevin and Kenny, who run a processing facility near Mount Ijen. They work with nearly 400 smallholder farmers, many growing under shade and intercropping with chilies and beans for additional income, and they've added optical sorting to select the ripest cherry. The cherries are sorted before reaching the Botolinggo wet mill, dried naturally for 11 to 13 days, and finished at the Driyorejo dry mill.
